Purslane Salad with Nectarines | Life

  • 1 bunch of purslane
  • 1 nectarine
  • 1 teaspoon olive oil
  • 50 g aged cheddar or mihalic cheese
  • 1 teaspoon roasted peanuts
  • 2 tablespoons of balsamic
  • 2 tablespoons of olive oil


Wash and dry the purslane leaves by separating them from their stems (you can also use them by frying them with onions, not discarding the stems). After washing and drying the nectarine, cut it into slices. Take 1 teaspoon of oil in the pan and when it is heated on medium heat, place the nectarine slices in a single row and fry on both sides. Take purslane leaves in a serving bowl and place the fried nectarines and thinly sliced ​​cheese on them randomly. Sprinkle with peanuts and serve with balsamic and olive oil. After preparing the salad, it is even more delicious when you cover it with cling film and leave it in the refrigerator for 1 hour.
