Lemon and olive oil cookies recipe



Materials

  • 2 cups of flour (280gr)
  • 1/3 cup of starch (40gr)
  • 1 cup of granulated sugar (200gr)
  • 1/2 teaspoon of baking soda (4g)
  • 1/2 teaspoon of baking powder (4gr)
  • 1/3 cup olive oil (80gr)
  • 2 eggs (100 g)
  • rind of 2 lemons
  • 2 tablespoons of lemon juice
  • 1 pinch of salt
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract

Fabrication

Flour, starch, salt, baking soda and baking powder are mixed and sieved. In a bowl, mix lemon juice, olive oil, egg, vanilla extract and the rind of 1 lemon. And the dry one is added to the previous mixture. It is kneaded. Lemon scented sugar is made by mixing the remaining 1/4 glass of sugar with the peel of the other lemon. Take 1 tablespoon of the dough, roll it by hand, turn it in a mixture of granulated sugar and lemon peel, and arrange it on a tray with baking paper, leaving a distance between them. Bake in a preheated oven at 175 degrees for 12-13 minutes. After coming out of the oven, they are waited for 5 minutes to cool down, then they are placed on a grill and waited for them to cool completely.
