It is so easy to make mascarpone cheese at home… It will be ready to use in less than 10 minutes by putting it in a low heat on the stove, then filtering it on clean cheesecloth and keeping it in the refrigerator for a day. You can use it in any dessert you desire, such as cakes, cakes and Tiramisu with Spekulatius Biscuits, the recipe of which I will explain in the coming days.

- 3 corner cream, 600 ml
- 1.5 tablespoons of lemon juice
Put the cream in a saucepan, heat it on low heat until it reaches 80 degrees (do not boil!). Make sure it stays at the same temperature for 3 minutes. Add lemon juice and keep it on the stove for 3 more minutes on very low heat, not exceeding 80 degrees. Place several layers of clean cheesecloth in a strainer and pour the cream over it, cover it with cling film and leave it in the refrigerator overnight (24 hours). Scrape the strained cheese over the cheesecloth and put it in a clean glass container. You can store it in the refrigerator for 2-3 days with the lid closed.
A quick note:
You can use the liquid cream remaining at the bottom after the mascarpone cheese is filtered by using it while making cakes.
