I prepared various dishes with tiny artichokes, cibes grass, tangle, asparagus and kale from a very dear friend from Urla. Our first recipe is a healthy and delicious meal that you can easily make with mastic artichokes and peas… I will share the others in turn in the future…

- 18 – 20 small gum artichokes
- 5 tablespoons of olive oil
- 1 lemon peel, grated
*First of all, pour 3 liters of water and the juice of one lemon into a large bowl (we take it into this water without waiting for the artichokes we have picked to not darken). Remove the outer coarse leaves of the artichokes and cut them one cm from the top and transfer them to water with lemon without waiting.
* Roughly chop the white parts of the spring onions and put them in a large rice pot, add 2 tablespoons of olive oil and sauté until lightly browned. Add peas, peeled artichokes, grated lemon peel, juice of one lemon, salt and hot water. With the lid of the pot closed, cook on medium heat for about 30 minutes until the artichokes soften (as if there will be half a glass of water at the bottom of the pot).
* Finely chop the green parts of the onions and sprinkle them over the cooked artichokes, cook for another 5 minutes and turn off the stove. Drizzle the remaining 3 tablespoons of olive oil over the food. Serve warm or cold, garnished with dill leaves.
